
Tricolour Barfi with a Twist of Health

A few ingredients from your pantry and 15 minutes are all you need to churn out this lip-smacking tricolour barfi. Coconut, pistachios, saffron, ghee, and stevia blend together to create this decadent sweet. Give it a twist of immunity and good health by adding adaptogenic ashwagandha. Plus, it is packed with nutrients, so you can freely indulge without counting calories.

Ingredients
200 ml almond milk
200-gram milk powder
2 tbsp organic desi ghee
Stevia/Sugar as per taste

1 tsp Good Lyfe Project Ashwagandha Superoot Powder
5-6 pistachios
2 tbsp dry coconut or fresh coconut
Few saffron strands soaked in a tbsp of warm milk or water
A square cake tin lined with butter paper
Directions
Add ghee, almond milk, and milk powder - a little at a time in a thick bottomed pan and mix well.
Once it is properly mixed, place the pan on medium flame.
Stir continuously to cook the mix. This will take about 5 minutes.
Now add stevia. Keep stirring to prevent any lump formation. Replace with white sugar if kids will be sharing the same.
When the mix starts to clump up and leave the sides of the pan, switch off the flame.
Transfer the mix equally into three different bowls.
For the green colour, add blanched and blended pistachios to one of the bowls and mix well to get an even green colour.
For the white colour, add coconut to the mix and blend well.
For the orange colour, add saffron to the mix and blend.
Spread the green-coloured mix at the bottom of the cake tin followed by the white-coloured mix.
Top it with the orange-coloured mix.
Place the tin in the refrigerator for about 30 min and allow it to set.
Carefully take the butter paper out of the tin and place it on a cutting board.
Cut the barfi into any size or shape of your preference.
Recipe Note
Pro-tip: Looking for a vegan version? Replace milk powder with almond meal and ghee with margarine. If you want a slightly darker colour for your barfi, add a drop of food colour.
