Ingredients
1 cup vegan margarine / softened butter
1 cup brown sugar or molasses
1/4th cup refined sugar
2 eggs or egg replacement
2 tsp vanilla extracts
1 tsp cinnamon
1 pinch nutmeg

1 tsp baking soda
1 pinch Himalayan salt
1 ½ cup Almond Flour/ gluten-free flour
3 ¼ cup rolled oats
Directions
Cream together margarine/butter and sugars to a smooth consistency
Blend egg or egg replacement and vanilla extracts
Add cinnamon, nutmeg, ginger powder, baking soda, and salt. Beat well
Sift in the flour and rolled oats. Mix and blend to form the cookie dough
Scoop the dough on a baking tray lined with a parchment sheet with an ice-cream scoop or a round tablespoon
Refrigerate the tray for about 20 minutes to set the dough
Bake in a preheated oven for 8-10 minutes at 175 C/ 350 F degrees
Cool it on the wire rack and store it in an air-tight container
